海皇蒸蛋羹[15P]
[size=4][b]材料 :干贝四粒(泡隔夜,放进一饭碗水里蒸一小时,汤留用),雪蟹腿蒸熟取肉,中虾烫熟,鱿鱼切四公分长筒状,均匀的切两共分长条状(入滚水烫开成花瓣型),蛋一个加班饭碗蒸干贝的汤汁打散(加少许盐调味)。

做法 :将两粒蒸熟的干贝分别镶入鱿鱼筒中间,和虾,蟹腿,另两粒干贝按个人喜好摆盘,淋上蛋液,放进蒸笼里,上盖以大火蒸三分钟,转小火,用筷子架着使盖微开缝(以助空气流通,使蛋羹嫩滑)继续蒸七分钟。另半碗蒸干贝的汤汁煮开,加少许太白粉水勾琉璃芡,淋于蛋羹上即可。
