中秋快到自己动手《冰皮月饼》超赞[68P]
中秋快到了,当然中秋吃得最多的就是冰皮啦~买现成的很贵,自己做,成本就低很多很多~自己也跃跃欲试,7|j1@]Ctw2Z

于是买了材料和模具就动手做。*q|!c+W P Q9l
用了两种方法来做,三种口味,发现用澄粉的那种方法, b] s/QRHL
口感是比较好,而且很柔软,很滑很细腻,绿豆馅和奶黄馅*F*CC!f,xl+z'svD

[/color]低粉45g 粟粉45g 吉士粉90g 砂糖160g 牛油45g &tF

炼奶60ml 牛奶540g 鸡蛋90g(三个左右)i txP^/Kn.`
1、将牛油隔水煮溶备用

2、炼奶、牛奶拌匀cWg"ola"ba
3、把粉类和砂糖混合,然后把蛋分三次加入!euGx0pqS
4、加入(1)(2)拌匀,过筛一次'T1K l&Lf#h
5、把(4)入锅大火蒸15-20分钟至熟

6、蒸熟后放凉,然后搓滑即可

1、绿豆洗净,加适量水入锅煮透mh(}[-{/j s(a/\
2、把煮透的绿豆用搅拌机搅成绿豆泥:U5d

3、把绿豆泥倒入锅中分次加入砂糖,分次加入色拉油,小火炒干即可q;k;{FA%P!a

1、所有粉类加砂糖混合

2、牛奶加炼奶拌匀,倒入粉中搅拌均匀

糯米粉120g 粘米粉120g 澄粉70g 糖60g

2、所有粉类混合,加入(1)搅拌均匀

3、搅拌好的面糊静置30分钟后入锅大火蒸30分钟至熟+E~,k(v1A3^

1、冰皮冷却后,把冰皮分成25克的小挤子压扁(这个克数是用果冻模的,如果2^0]TQF-pND
用月饼模一个小挤子大概30克左右),放入馅料,包紧、收口、搓圆,在手上拍9sM:@oyfS4U
点糕粉防粘

2、在模具里撒一点糕粉,让糕粉均匀粘在模上壁上,以方便脱模,然后把包好的7Kd4\7V4[7x,c(g
冰皮面团放进模具用手掌压实q]K1L/}#`2j.?rh
3、把月饼用力磕一下,再倒出来,就完成了

4、月饼放入冰箱冰一下,口感更好哦
