11. 当炒到茄子及调料感觉都均匀时, 加入250ml的水, 再翻炒一下.

12.把锅盖盖上, 让它在里面焖一焖 (焖一焖比较快熟, 以中火焖).

楼上的说得好,茄子就应该多放油,少放水或者不放水,才能烧出好味道。水多了,口感不好。多谢发贴,辛苦了。

水太多啦,而且感觉茄子的颜色不够,不好看,没有说的那么好,可以按照楼上的建议再改良下
